Keto Breakfast Burrito

What We Will Need

2 large romaine lettuce leaves, or 2 collard green leaves

2 large eggs

2 slices of bacon, fried till crisp and then chopped

1/4 avocado, sliced

Optional The cheese ( ¼ cup Shredded cheddar cheese)

1 tbsp of sour cream though its addition is not compulsory.

1 tbsp salsa (optional)

1 tbsp butter for cooking

How We Are Going To Do It

step 1 : Cook the eggs: In a small non stick skillet, warm the butter in medium heat. Beat the eggs in the pan, mix and pour over to cook it until set, for about 2-3 minute. Sprinkle with salt and pepper.

step 2 : Prepare lettuce wraps: Place the large lettuce leaves in a flat clean surface so that it will be easier to build the sandwiches. If you are to use collard greens, they can be steamed for 3-4 minutes to soften them up to get their pliability.

step 3 : Assemble the burrito: Take the scrambled eggs and divide it into two halves and put one half on each of the leaves. This should be done by incorporating bacon pieces, avocado pieces and finally sprinkle shredded cheese. Top with sour cream and salsa if desire.

step 4 : Wrap and serve: Take each side of the lettuce and fold it over the filling and then roll like a burrito. This can be served immediately and oranges can be served as a side dish for that tasty and healthy breakfast.

You can also use collard greens if you like to have something more rigid to act as the vessel for the stuffing. Although steaming the collard greens will result into a softer texture for them to be rolled.

Crispy Bacon: For perfectly crispy bacon, place in a wire rack, over a baking pan, and heat the oven at 400 F or 200 C for about 15 mins.

Meal Prep: Do not let the fillings such as scrambled eggs and bacon etc, to stay refrigerated for more than 3 days, but it is advisable to store them in different containers. Prepare the burritos in the morning, new ones.

Extra Flavor: You can also sprinkle hot sauce, or paprika on the eggs when you are cooking it for extra flavor.
