Keto Spaghetti Squash with Garlic Butter Recipe

As the name suggests spaghetti squash is a low carbohydrate vegetable with the texture of spaghetti correcting it for pasta. For this dish, the spaghetti is roasted and then dressed in garlic butter- the perfect keto side dish. It’s very easy to prepare, and can be served alongside most entrees!

What We Will Need

1 medium spaghetti squash

3 tablespoons butter

2 cloves garlic, minced

All spices including salt and pepper to taste.

Optional: For serving – fresh parsley or grated Parmesan cheese

step 1 : First, set up the preheat of the oven to 375°F (190°C).

step 2 : Spaghetti squash should be cut into halves along the length of the squash, and seeds should be removed.

step 3 : Put the cut-side down on the baking-on half of a large baking sheet lined with parchment and roast for 40-50 minutes until tender.

step 4 : Poke the flesh with a fork in such a manner as to make it look like spaghetti.

step 5 : Heat a non-stick skillet over medium heat, add butter, when melting, add garlic until it becomes golden brown.

step 6 : Drain the squash and fold it gently on the garlic butter sauce and sprinkle with salt and pepper.
